The recipe draws on techniques used by sailors in the 16th and 17th centuries, blending sugarcane sourced from across the West Indies and South America before ageing in bourbon barrels for up to fifteen years.

The result is a rich, complex spirit with aromas of Madagascan vanilla, soft caramel and toasted oak.
