It is based in Aviemore, beneath the Cairngorms, and makes its gin in small batches, with water from the River Spey. Its original copper pot still is named Ginger, after Jack’s late grandfather.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eHow it’s made\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eA blend of neutral grain spirit and Speyside water is loaded into the still, with the botanicals packed in muslin bags and submerged directly in the spirit. The stills are heated slowly, the heads are discarded and only the hearts are kept.
