Aviation American Gin, 70cl

Born from Portland, Oregon's craft distilling scene and named for the classic Prohibition-era Aviation cocktail, Aviation American Gin is a new-Western style gin that swaps heavy juniper for a softer, more elegant balance. A Dutch-style rye spirit base carries seven hand-selected botanicals — juniper, lavender, anise seed, sarsaparilla, dried orange peel, cardamom and coriander — steeped for 48 hours before redistillation for a smooth, rounded character.

On the nose, expect crisp juniper alongside delicate floral sweetness, a hint of Parma violets and bright citrus peel. The palate turns wonderfully spicy, with cardamom and a scattering of cinnamon taking the lead, while the finish lingers with warm spice and a final flourish of citrus. Gold-medal winning at the San Francisco World Spirits Competition, it's endlessly versatile in a G&T, Martini or Last Word.
