Balcones Baby Blue Texas Corn Whiskey, 70cl

Balcones Baby Blue is a Texas corn whiskey bottled at 46% ABV, and it was the first release from Balcones. Made from roasted blue corn rather than the yellow corn used in most American whiskey, it has a rounded, nutty character with butter, vanilla and gentle spice. About the distillery

Balcones Distilling was founded in 2008 in Waco, Texas, and began life in a former welding shop. The distillery presents itself as a pioneer of Texas whiskey, with the first whisky legally distilled in Texas since Prohibition, and it makes bold, distinctly Texan spirits.

How it’s made

Baby Blue is distilled from roasted blue corn, using atole, a blue corn meal from the Hopi, in copper pot stills. The spirit then spends a short time maturing in oak, which adds colour and some complexity while keeping the fresh, youthful corn character that defines the style.

Tasting notes

• Nose: Butter, kettle corn and vanilla, with toffee, cinnamon, nutmeg and fresh bread, plus hints of honey and coffee.
• Palate: Tropical and stone fruit alongside brown sugar and sweet tea with lemon, with a touch of smoked chilli and a round, nutty texture.
• Finish: Medium to long and warming, with late cinnamon, leather and a little mint.

How to enjoy it

Baby Blue is pleasant neat in a tumbler, and a few drops of water open up the sweeter corn notes. It also makes a characterful base for an Old Fashioned or a whiskey highball with ginger ale, and it suits smoked meats and barbecue.
