Boutinot La Côte Sauvage Cairanne is a full-bodied red from Cairanne, one of the named cru villages of the Southern Rhône. Made from Grenache Noir, Syrah and Mourvèdre, it is the standout cuvée from Domaine Boutinot and is described as serious, opulent and complex. Dark red fruit, sweet spice and a savoury edge run through the wine, supported by supple tannins and a long spell in French oak. A rich, characterful Southern Rhône red that rewards a little time in the glass.

About the producer

Boutinot is a well-known UK wine importer that also owns vineyards in France, South Africa and England. Paul Boutinot bought a winery and vineyards in Cairanne in 2010, and the domaine now farms around ten hectares of its own vines in the village. La Côte Sauvage is its top cuvée.

How it’s made

The grapes are picked by hand and fermented in open-topped oak vats using only natural yeasts. Long maceration, gentle pumping over and manual punching down of the cap extract colour and flavour without harshness. The wine then matures for 22 months in French oak, in a mix of barrels and larger demi-muids, before bottling.

Tasting notes

• Nose: Morello cherry and cinnamon spice, with dark red fruit.
• Palate: Soft, dark plummy fruit with liquorice, chocolate and a hint of black tea; full-flavoured and smooth, with supple tannins.
• Finish: Rich and savoury, becoming more elegant with air.

How to enjoy it

Open the bottle a little ahead of time, or decant it, to let the wine show its elegance. Serve at around 16–18°C in a large red wine glass. Boutinot La Côte Sauvage Cairanne suits slow-cooked dishes such as duck cassoulet or a beef casserole, and grilled aubergine with a tomato sauce also works well.
