Chairman's Reserve 1931 Rum, 70cl

Chairman’s Reserve 1931 Rum is a dark, richly structured rum from St Lucia Distillers, created as a tribute to the year the distillery was founded. It blends molasses and agricole rums distilled in both Coffey and pot stills, then ages them in ex-bourbon and ex-port casks. The result is a gold-bronze rum with honeyed raisins, toasty oak and a dry, tannic finish, bottled at 46% ABV and presented in a decanter-style bottle with a wooden stopper.

About the distillery

St Lucia Distillers was established in 1931 by Denis Barnard and has become one of Saint Lucia’s most cherished producers. The distillery is based at Roseau and makes a wide range of rums from molasses, including the Chairman’s Reserve family. This bottling pays tribute to Barnard’s rum philosophy and craft, and to the year the story began.

How it’s made

The blend combines rums made from molasses with rums distilled from sugarcane juice in the agricole style. Spirit from Coffey column stills and traditional pot stills is aged in ex-bourbon and ex-port casks, which add oak structure, dried-fruit richness and gentle spice before the rums are married and bottled.

Tasting notes

• Nose: Honeyed raisins and vibrant toasted oak, with hints of leather, spice and tobacco.
• Palate: Sweet sultana fruit and crème caramel with buttery oak, drying into tannic oak flavours.
• Finish: Dry and tannic from the casks, with a grassy, aromatic sweetness from the sugarcane distillate.

How to enjoy it

This is a rum for sipping neat or with a few drops of water, in a tulip or snifter glass, so the oak and dried fruit can open up. A single large ice cube also works well. It suits an Old Fashioned built with rum in place of whisky, or a quiet evening alongside dark chocolate.
