Clonakilty Port Cask Finished Irish Whiskey is a blend of Irish whiskeys matured in ex-bourbon barrels and finished in ruby port casks from Portugal’s Douro Valley. Bottled at 43.6% ABV without chill-filtration, it is a fruit-led, smooth Irish whiskey with a gentle coastal character, bringing orchard fruit and cherries together with soft spice. It is an approachable cask-finished Irish whiskey from a family-run distillery on the Cork coast.

About the distillery

Clonakilty Distillery sits on the edge of the town of Clonakilty, on Ireland’s southwest coast in County Cork. It grew from the Scully family, an Irish farm family who have worked the same land for nine generations, with a big ambition to improve Irish whiskey. The whiskey is matured in a warehouse overlooking the Atlantic, and bottling is handled in-house.

How it’s made

The distillery triple-distils its whiskey for a lighter, sweeter spirit, using a long fermentation and its “gentle cut” method, with spring water from a deep artesian well used to reduce the spirit gradually. Port Cask blends Clonakilty’s own single pot still whiskey with single grain whiskey, drawn from ex-bourbon barrels and ex-port casks.

Tasting notes

• Nose: Fresh sweet apples and ripe peaches with vanilla, a creamy note and a hint of background wood.
• Palate: Very fruity, with cherries, raisins, soft spices and a hint of cardamom.
• Finish: Medium to long, with soft spice and a touch of chocolate.

How to enjoy it

Clonakilty Port Cask Finished Irish Whiskey is easy to sip neat in a tulip glass, and a small splash of water opens up the fruit. It also makes a rich Old Fashioned. Try it with charcuterie, mushroom risotto, roast duck or baked figs with blue cheese.
