Crossbill Green Dry Gin, 70cl

Crossbill Green Dry Gin is a small-batch Scottish gin named after the rare Scottish crossbill finch found in Highland pine forests. It uses three different parts of the juniper plant — blue berries, green unripe berries and juniper needles — hand-picked in the Cairngorms and macerated for six days before distillation in Glasgow.

It opens with fresh pine and bittersweet juniper, moves into a citrus-tinged mid-palate, and finishes dry with a gentle pepperiness. Best served with a light tonic, or with elderflower tonic and fresh mint.
