Doorly's XO is a Fine Old Barbados Rum from the multi-award-winning Foursquare Distillery, home of master blender Richard Seale. It's a blend of pot- and column-still rum, matured for at least six years in ex-bourbon casks before a final finishing period in Oloroso sherry casks — a technique Foursquare has become internationally renowned for.
On the nose there's dry oak alongside rich, fruity sweetness. The palate delivers a generous wave of toffee, raisins and vanilla, layered with stewed fruit, coffee and milk chocolate, closing on a warm, lingering, treacly finish.
Made with no added sugar or flavourings, it's an honest, well-balanced sipping rum that also holds its own in an Old Fashioned or a rum Manhattan.
