Four Pillars Rare Dry Gin is a gin from Four Pillars Distillery, Healesville, Yarra Valley, Australia, distilled in the distillery's copper pot still named Wilma using triple-filtered Yarra Valley water. Local Australian botanicals such as Tasmanian pepperberry and lemon myrtle sit alongside classic and exotic gin botanicals for a vibrant, contemporary style.
The nose is light and sweet with juniper, chopped mint, fresh citrus and floral hints. The palate opens with candied peel and angelica, building through warm cinnamon and white pepper to a spicy mid-palate, before a suitably drying finish of liquorice and lemon zest. Equally at home in cocktails or served simply over ice.
