Gabriel Boudier was founded in 1874 in Dijon, Burgundy, when Gabriel Boudier took over Maison Fontbonne. The business remains family-owned and is best known for its Crème de Cassis de Dijon, the classic base for a Kir. The house keeps traditional recipes handed down through generations, and uses rotating tanks to improve maceration.

How it’s made

This crème de cacao is made using roasted cocoa beans from the Ivory Coast, and the result is an intensely flavoured but completely clear liqueur. Unlike a brown crème de cacao, it carries no colour into the glass, which is what makes it so adaptable behind the bar.
