Gabriel Boudier Crème de Cassis de Dijon Liqueur, 50cl
Gabriel Boudier Crème de Cassis de Dijon Liqueur, 50cl
Gabriel Boudier Crème de Cassis de Dijon Liqueur, 50cl, is a blackcurrant liqueur from the Burgundian city of Dijon, bottled at 20% ABV. It is made by macerating carefully selected blackcurrants, with the aim of strong fruit flavour and a deep colour. It is the house’s main product and the classic ingredient in a Kir or Kir Royale.
About the producer
Gabriel Boudier is a liqueur house in Dijon, the capital of Burgundy. It grew from the Fontbonne house, founded in 1874, which Gabriel Boudier took over in 1909 and renamed. Since 1936 it has passed through the Battault family, moved to Rue de Cluj in 1969, and remains family-owned. The producer says it uses natural ingredients and avoids artificial flavours and colours.
How it’s made
Hand-selected blackcurrants are macerated in spirit. The resulting infusion is very concentrated and highly acidic, so sugar is added to balance it. The maceration is intended to bring out strong fruit flavour and deep colour, and the finished liqueur is bottled at 20% ABV in this 50cl size.
Tasting notes
- Nose: Blackcurrant, in the style of a cassis liqueur.
- Palate: Blackcurrant fruit, with sugar added to balance its natural acidity.
- Finish: Blackcurrant lingers after each sip.
How to enjoy it
Traditionally the liqueur is blended with dry white wine, at roughly one part cassis to five parts wine, to make a Kir, a deep pink aperitif named after Canon Félix Kir, mayor of Dijon. For a Kir Royale, pair it with champagne instead.
