About the producer

Gabriel Boudier was founded in 1874 in Dijon, Burgundy, when Gabriel Boudier took over Maison Fontbonne. The business remains family-owned and is best known for its Crème de Cassis de Dijon, the classic base for a Kir. The house keeps traditional recipes handed down through generations, and uses rotating tanks to improve maceration.

How it’s made

Wild blackberries sourced from Morocco and Chile are macerated in neutral spirit, then sweetened with added sugar. Maceration is the house technique at Gabriel Boudier, where rotating tanks are used to improve extraction of flavour from the fruit.

Tasting notes

• Nose: Very aromatic, with blackberry and raspberry jam alongside floral hints of violet and rose.
• Palate: Rich blackberry and raspberry fruit, with vanilla, chocolate and a touch of bitter cacao.
• Finish: Lingering blackberry tartness, with chocolate and a faint spice.

How to enjoy it

Splash Gabriel Boudier Crème de Mûres Sauvages into dry white wine for a Kir-style aperitif, or top it with chilled Champagne or sparkling wine. It also works in fruity cocktails such as a Bramble, and can be drizzled over ice cream or fresh fruit.
