Glenmorangie Signet Highland Single Malt Scotch Whisky, 70cl

Glenmorangie Signet is one of the richest and most unusual whiskies in the Glenmorangie range: a no-age-statement Highland single malt Scotch whisky built around spirit made from heavily roasted chocolate malt. The idea came to Dr Bill Lumsden over a cup of Jamaican Blue Mountain coffee, and the result is a dram of mocha, dark chocolate and spice, first released in 2008 and bottled at 46% ABV.

About the distillery

Glenmorangie was founded in 1843 by farmer William Matheson and his wife Anne at Tain in Ross-shire, in the Scottish Highlands. The name is Gaelic for ‘Valley of Tranquility’. The distillery is known for having the tallest stills in Scotland, at 5.14 metres, and for its long tradition of cask experimentation under Dr Bill Lumsden, Director of Whisky Creation.

How it’s made

Signet begins with Glenmorangie’s chocolate malt spirit, made just once a year in those giraffe-high stills. Its espresso-like intensity is tempered over the years with a selection of casks: bourbon for creaminess, sherry for sweetness and virgin charred oak for spice. The blend is then balanced with some of the oldest whisky in the distillery’s stocks.

Tasting notes

• Nose: Soft and sweet, with dried orange peel, cocoa, golden syrup and dried fruit.
• Palate: Sweet dark chocolate and toasted spice, with balanced barrel char and a bitter coffee edge.
• Finish: Long, with fresh citrus and dark chocolate that slowly grows sweeter.

How to enjoy it

Glenmorangie Signet is a whisky for slow sipping. Pour it neat into a tulip-shaped nosing glass and give it a few minutes, then try a few drops of water to open up the mocha and citrus notes. It makes a fine after-dinner dram alongside good dark chocolate or an espresso, and a memorable gift for a whisky lover.
