Isle of Coll Hebridean Gin, 70cl

Isle of Coll Hebridean Gin is a small-batch dry gin distilled on the Hebridean island of Coll, off Scotland’s west coast. Ten botanicals go into the still, and three of them are foraged on the island itself: heather, bog myrtle and sea kelp. Coriander, cinnamon and star anise join juniper to give a gin that is dry, floral and gently spiced.

About the distillery

Isle of Coll Distillery is a young island producer making a small range of handcrafted spirits, including Hebridean Gin, Gorse Flower Gin and Twisted Highlander Vodka. Hebridean Gin was created with Colin Wheeler-James, a chef who grew up on Coll and has experience of producing spirits. Everything is made on a 50-litre still in very small batches of around 80 bottles.

How it’s made

The recipe combines ten botanicals, including island-foraged heather, bog myrtle and sea kelp alongside coriander, cinnamon, star anise and juniper at its heart. It is distilled in small batches on the island and bottled at 40% ABV.

Tasting notes

• Nose: Soft layers of floral and delicately herbaceous botanicals with crisp juniper.
• Palate: Smooth and dry, with juniper at the centre and a gentle, warming spice.
• Finish: Warming spice lingers alongside the floral and herbal notes.

How to enjoy it

Isle of Coll Hebridean Gin is built for a long gin and tonic, perhaps with a sprig of heather or a twist of orange peel. It is smooth enough to sip neat or over ice, or to pair with your favourite mixer.
