Isle of Wight Distillery Mermaid Spiced Rum blends sugar cane and molasses rums from Trinidad and the Dominican Republic, column distilled and aged for two to five years in oak bourbon barrels. Back on the Isle of Wight, the rum is infused with rock samphire, fresh white cherry, apricot, honey from the distillery's own beehives and black salt, then spiced with holy grass, cassia and vanilla. It is bottled in the distillery's signature scale-textured glass.
