Kilchoman PX Sherry Cask Matured Islay Single Malt Scotch Whisky, 70cl

PX Sherry Cask Matured Kilchoman PX Sherry Cask Matured is an Islay single malt Scotch whisky from the 2023 edition, fully matured in Pedro Ximénez sherry casks. The rich, raisined sweetness of the sherry meets the coastal peat smoke that defines Kilchoman, creating a dense, dark-fruited malt with a maritime edge. It is released in limited quantities and bottled without chill filtration or added colour.

About the distillery

Kilchoman is an Islay farm distillery, with the label proudly declaring it Uniquely Islay. The distillery was set up by Anthony Wills, who describes this release as rich and sweet, with hints of light citrus and waves of maritime peat smoke. It is bottled by Kilchoman Distillery on the island.

How it’s made

Unlike the 2021 PX bottling, which combined finished and fully matured casks, the 2023 edition uses only full-maturation casks. The whisky spent at least five years in Pedro Ximénez sherry casks previously used by Bodega José y Miguel Martin in Jerez, Spain. It is bottled at 50% ABV, non-chill filtered, with no colour added.

Tasting notes

• Nose: Dried fruit, earthy smoke, orange peel, dark chocolate and hazelnut.
• Palate: Salted caramel, marmalade, sultanas, cinnamon and a hint of coffee.
• Finish: Long, sweet and rich, with lingering smoke.

How to enjoy it

Sip it neat from a tulip glass, or add a little water to open up the sherry and smoke at 50% ABV. It makes a characterful base for a smoky Manhattan, and its dark-fruit sweetness suits dark chocolate, roasted nuts or a mature blue cheese.
