Le Preare Valpolicella Ripasso is a Valpolicella Ripasso Classico Superiore from Cantina Valpolicella Negrar in Veneto, Italy. About the winery

Cantina Valpolicella Negrar is a historic cooperative winery, founded in 1933 as Cantina Sociale Valpolicella at Villa Mosconi in Arbizzano di Negrar. Based in Negrar, in the Valpolicella Classica area of Veneto, it brings together around 230 member families of growers, and its wines include Amarone and Ripasso. Le Preare is the name of this Ripasso range.

How it’s made

The grapes are hand-picked in late September and early October, then destemmed and gently pressed. The wine rests in stainless steel until February, when it is passed over the dried Amarone grape skins and begins a second fermentation. It then ages for 10 months in wooden barrels before bottling.

Tasting notes

• Nose: Complex and spicy, with red fruit and berry aromas.
• Palate: Full and velvety, with a balanced structure of acidity and tannin.

How to enjoy it

Serve Le Preare Valpolicella Ripasso at around 16–18°C in a large red wine glass, opening the bottle a little beforehand. The producer recommends it with hearty meat dishes, roasts and aged cheeses, and it also suits game, making it a natural choice for a winter table.
