Manly Spirits Co. Lilly Pilly Pink Gin is a fruity, lighter-style pink gin from Manly Spirits Co. in Sydney, made with no added sugar. Native lilly pilly berries and pink flowers from the dunes of Sydney’s Northern Beaches sit alongside raspberry and blood orange, giving the gin its soft pink colour from natural raspberry infusion. Bottled at 40% ABV in a 70cl bottle.

About the distillery

Manly Spirits Co. is an artisan distillery in Brookvale on Sydney’s Northern Beaches, named after the Manly area known for its natural beauty. Founders David Whittaker and Vanessa Wilton work with forager and chef Elijah Holland to source local botanicals sustainably for their gins, vodkas and liqueurs.

How it’s made

Lilly Pilly Pink Gin is a juniper-based gin infused with around a dozen botanicals, including lilly pilly, riberry, native limes, raspberry, blood orange, coriander, angelica, orris, rosella flowers, sea fig and nasturtium flowers. It is made without added sugar, so the fruit character is balanced rather than sweet.

Tasting notes

• Nose: Floral but fresh, with crushed pine buds, lime zest and muted white pepper.
• Palate: Silky and vibrant, with red berry, citrus zest and a hint of musky confectionery.
• Finish: Raspberry and a late, warming spice.

How to enjoy it

Serve with a premium tonic over ice, garnished with raspberry, a wedge of pink grapefruit or edible flowers. It is also well suited to a Clover Club or a Pink Gin Sling made with pineapple juice, lime and raspberries.
