Ricard Pastis de Marseille is a liqueur from Ricard (Pernod Ricard), Marseille, Provence, France.
A pronounced aniseed and liquorice aroma dominates the nose. On the palate there's a bittersweet anise opening that develops into woody, herbal botanical notes, finishing smoothly with lingering liquorice sweetness. Diluted with water, it turns cloudy (louche) and softens considerably.
The Story: Created in 1932 by Marseille native Paul Ricard as 'the true pastis from Marseille'; the company merged with Pernod in 1975 to form the Pernod Ricard group, which still produces it today.
Serving Suggestion: Traditionally served diluted with cold water and ice, paired with Provencal nibbles such as olives, charcuterie and seafood.
