Taylor’s Chip Dry White Port, 75cl

Taylor’s Chip Dry White Port is a dry white Port from the Douro Valley, first blended by Taylor’s in 1934 and widely regarded as one of the original dry white Ports. Pale straw in colour, it is crisp, fresh and lightly nutty, and it is made to be served well chilled as an aperitif or lengthened with tonic. It is a very different proposition from the sweeter white Ports many drinkers expect.

About the producer

Taylor’s dates back to 1692 and is an independent, family-run Port house. It is dedicated entirely to Port, with its historic cellars in Vila Nova de Gaia and vineyards across the Douro Valley. Chip Dry was the house’s pioneering dry white aperitif Port, first blended in 1934.

How it’s made

Chip Dry follows the traditional Port method, but the brandy is added later than usual, after most of the sugar has turned to alcohol, which leaves an unusually dry wine. It is made from white grapes grown in the Douro Superior, with Malvasia Fina predominating. The component wines age for four to five years in oak vats before blending.

Tasting notes

• Nose: Fresh white fruit with citrus zest and floral notes, mellowed by hints of oak and toasted almond.
• Palate: Fresh and lively, crisp and dry, with a nutty depth from the oak.
• Finish: Clean, crisp and dry.

How to enjoy it

Serve Taylor’s Chip Dry White Port well chilled, at around 6–10°C, in a Port glass or over ice. For a Porto Tonico, pour one part Port over ice and top with two parts chilled tonic, then garnish with mint or lemon. It pairs well with salted almonds, olives, tapas and smoked salmon. Keep it in the fridge once opened.
