About the distillery

Tayport Distillery is a family-run distillery in Tayport, Fife, founded by Kecia McDougall, whose story begins in the apple orchards of Ohio. The team makes its own base spirit from locally sourced grain in a 500-litre iStill and works in small batches from grain to glass, using botanicals foraged close to home wherever possible and adding no sugar to its spirits.

How it’s made

Juniper and coriander are steeped in the base spirit for 24 hours before distillation. After distillation the gin is vapour infused with angelica, lemon peel, almond, bay leaf and the wild rose gathered from the banks of the Tay, a method that keeps the floral and citrus notes light and clear.

Tasting notes

• Nose: A bright burst of lemon peel and juniper.
• Palate: Fresh and citrusy, with juniper at the centre.
• Finish: Floral, with hints of wild rose and a sweet smoothness.

How to enjoy it

The distillery suggests a long serve with ice, a light tonic and a slice of orange or lemon, which lets the rose come through without overpowering the juniper. It also works well in a rose spritz or a floral-leaning martini, and is gentle enough to sip chilled.
