About the distillery

The Teeling Whiskey Company was founded in 2012 by Jack Teeling, who runs it with his brother Stephen. Its distillery in the Liberties area of Dublin officially opened on 9 June 2015, and was described at the time as the first in the city in more than 125 years.

How it’s made

The whiskey is distilled from a mash bill of half malted and half unmalted barley, then triple distilled. It is matured in a combination of American virgin oak, ex-bourbon and sherry casks before being bottled at 46% ABV without chill filtration.

Tasting notes

• Nose: Fresh grapefruit and citrus lead, with white grape, peach and hints of honeycomb and roasted almonds.
• Palate: Lychee and poached pear sit alongside white pepper, vanilla and warm roasted peach, with baked biscuit and a creamy texture.
• Finish: Dry and spicy, with cooked barley, oak and a lingering maple sugar sweetness.

How to enjoy it

This Irish whiskey works well neat in a tulip glass, with a few drops of water to open up the fruit and spice. It also stands up to a large ice cube, and makes a characterful base for an Old Fashioned or a Whiskey Highball.
