Tio Pepe Fino Sherry, Jerez, Spain, 75cl
Tio Pepe Fino Sherry, Jerez, Spain, 75cl
Tio Pepe Fino Sherry is a bone-dry Fino from Jerez, made from the Palomino grape and aged under a veil of flor yeast. Pale and fresh, it is a classic aperitif sherry, with the savoury, yeasty character and almond nuttiness that define the style. It is best served well chilled, and it suits olives, ham and seafood particularly well.
About the producer
Gonzalez Byass was founded in Jerez in 1835 and is still run by the Gonzalez family, now in its fifth generation. The house is based in Jerez de la Frontera in Andalusia, the heart of the Jerez sherry region, and Tio Pepe is its best-known wine, bottled by Bodega Gonzalez Byass Jerez.
How it’s made
Palomino grapes are pressed and fermented in stainless steel, then lightly fortified. The wine ages for more than four years in American oak barrels using the solera system, beneath a layer of flor yeast. This biological ageing protects it from oxygen and keeps its pale golden colour.
Tasting notes
- Nose: Sharp but elegant yeasty aromas from the flor, balanced by toasted almond; bread and apple notes also feature.
- Palate: Completely dry and very fresh, with almond and green apple flavours.
- Finish: Long and complex.
How to enjoy it
Serve Tio Pepe Fino Sherry very chilled in a small white wine glass, either as an aperitif or alongside food. Olives, Iberian ham, cheese, fried fish and shellfish all work well, and its low acidity makes it a good match for vinegar-based dishes. Once opened, keep it in the fridge and drink it within a few weeks.
