Waterford Hook Head Edition 1.1 Single Farm Origin Irish Single Malt Whiskey is a 70cl bottling made from Irish Propino barley grown at Hook Head Farm in County Wexford, harvested in 2015. Bottled at 50% ABV, it shows a spicy, maritime character that reflects the exposed coastal farm where the grain was grown.

About the distillery

Waterford Distillery, led by Mark Reynier, is built around terroir, treating the barley farm as the source of a single malt’s flavour. Each farm’s grain is malted and distilled separately so that its character is preserved. The distillery released its first bottles in May 2020, and Hook Head is one of the releases in its Single Farm Origin series, named after a lighthouse on Ireland’s southern coast.

How it’s made

The whiskey is made exclusively from Propino barley from the 2015 harvest at Hook Head Farm, using a long fermentation and a slow double distillation. It matured for three years and eight months in a mix of first-fill bourbon barrels, virgin American oak and French oak casks.

Tasting notes

• Nose: Grain and earth, clove, white pepper, toffee-like caramel and a touch of savoury popcorn.
• Palate: Spicy and layered, with salted caramel, citrus, ginger, nutmeg, vanilla cream and a salty, sea-spray note.
• Finish: Oily and dry, with lingering spice, vanilla, ginger and a hint of bitter chocolate.

How to enjoy it

This is a whiskey for sipping neat, so the spice and salted caramel can be appreciated. At 50% ABV, a few drops of water may soften the spice and bring out the creamier vanilla notes. Serve it at room temperature in a tulip glass.
