Williams & Humbert Pando Fino Sherry, Jerez, Spain, 75cl
Williams & Humbert Pando Fino Sherry, Jerez, Spain, 75cl
Williams & Humbert Pando Fino Sherry is a dry fino from Jerez in southern Spain, made entirely from Palomino grapes and aged biologically beneath a veil of flor yeast. Pale straw to gold in colour, it is light, very dry and refreshing, with the yeasty, almond-like character that defines the style. It is a traditional aperitif sherry, intended to be served very cold.
About the producer
Williams & Humbert was founded in 1877 by Sir Alexander Williams and Arthur Humbert in Jerez de la Frontera. It remains a family-owned bodega, known for its sherries and brandies, with extensive vineyards and one of the largest wine cellars in Europe.
How it’s made
Pando Fino is made from estate-grown Palomino from the Balbaina vineyard in Jerez Superior. The wine is aged for at least five years in oak casks using the solera system, which blends younger wines into older ones, under a layer of flor yeast that protects it from oxygen and shapes its flavour.
Tasting notes
- Nose: Yeasty aromas from the flor with a hint of almond.
- Palate: Very dry, light and refreshing, delicate yet full-bodied.
- Finish: Long.
How to enjoy it
Serve Williams & Humbert Pando Fino Sherry very cold, either on its own as an aperitif or over ice. Its dry, savoury style suits seafood, olives, almonds and Iberian ham. A small white wine glass works well. Once opened, keep the bottle in the fridge and finish it within a few weeks, as fino is best enjoyed fresh.
