Wolfburn Aurora is a no-age-statement Highland single malt from Wolfburn Distillery in Thurso, Caithness, mainland Scotland's most northerly distillery, revived in 2013 on the site of a 19th-century distillery of the same name. Wolfburn uses traditional methods: long, slow fermentation with a single yeast strain and double distillation in small copper stills, using water from the distillery's own natural spring.
Aurora is matured in a combination of ex-bourbon and Oloroso sherry casks, then bottled at 46% ABV without chill filtration or added colouring. On the nose, sherry influence is immediately apparent, layered with grassy floral notes, honey and ripe apricot. The palate is creamy and vinous, with sherried stone fruit balanced against a savoury, malty backbone of barley and bran, and the finish is gentle and earthy, closing with toasted bran and a note of black tea.
Best enjoyed neat or with a few drops of water to open up its fruit and sherry character.
